The Pairing: A Taste of the Current Release Wines

The Pairing is part of a very fancy family of wines that includes JONATA and The Hilt. The Pairing wines are sourced from the same vineyards as JONATA and The Hilt, but from blocks that are too young or don’t fit their vintage style. That’s good for consumers because The Pairing wines are made with the same attention to detail, sourced from three acclaimed Santa Barbara regions (Santa Ynez Valley, Sta. Rita Hills and Santa Maria Valley), but they’re very affordable. Who doesn’t appreciate good wine at a fair price? We received these wines as tasting samples.

2021 The Pairing Sauvignon Blanc, Californiapale yellow with generous aromas of guava, cut grass and citrus pith. Flavors include intense minerality, oat hay, dried grass and citrusy acidity. The finish is fresh and juicy. 13.5% abv. 1,250 cases made. SRP $25

Sauvignon Blanc was aged in 1/3 new French oak, 1/3 neutral French, 1/3 stainless steel for 10 months. Coopers: Taransaud, Sylvain, and Ermitage.

2018 The Pairing Red, California dark ruby with generous aromas of ripe plums, blackberries and figs. Berry flavors predominate with earthy, berry brambles in the background supported by drying tannins. Oak flavors linger on the finish with good acidity. 14.9% abv. 12,750 cases made. SRP $25

The blend is 60% Cabernet Sauvignon, 20% Cabernet Franc, 18% Merlot, 2% Petit Verdot aged in French oak, 55% new and 45% neutral, for 22 months. Coopers include Taransaud, Sylvain, Bel Air and Dejarnac.

JONATA and The Hilt Winemaker, Matt Dees, crafts this Bordeaux blend with food in mind. It is a drink-now blend that will pair well with a meal, but that can also be aged. 

Other wines in The Pairing range include: Pinot Noir, Rosé of Pinot Noir, Syrah and Chardonnay.
