We had the 2008 Clos De La Chapelle Muscadet Sevre & Maine Sur Lie with some Dover Sole. The color is a very pale yellow, almost clear. We tasted the wine before eating and it had some floral notes and also a smell that reminded me of the ocean. In the mouth you first notice the high acid content and then some mineral, lemon and the ocean again. The moderate length finish gives you green apple. As far as the sole, the wine actually over powered the fish although the lemon in the wine did complement the lemon zest used in the butter the fish was sauteed in. I think next time I will pair some mussels or oysters with this wine.
