Dave brought over a 2005 Provenance Vineyards Rutherford Cabernet Sauvignon to drink with our Monday night dinner this week. Nancy made a quick pasta sauce of olive oil, garlic, chili flakes and a little tomato paste. Then she sauteed some thinly sliced onions and red bell peppers with some Aidells Chicken and Apple sausage. Mixed it all together and tossed it over some linguine. It was really good and we all ate too much.
The Provenance Cabernet went fairly well with it although the wine was a little big. It was a dark ruby/garnet color. The nose had ripe dark fruits and some vanilla. The flavors were deep and complex. Right off you were hit with a burst of ripe dark fruit and cedar, then some tobacco started to show up. The tannins were moderate and well integrated with good acidity. The finish was long with cedar and tobacco.
