New Release Wines From The Pairing

Today we’re sipping three new releases from The Pairing that were sent to us as tasting samples. The Pairing range of wines is part of a highly-regarded family of wines that includes JONATA and The Hilt. This is our second taste of The Pairing wines.

Matt Dees is the winemaker for all three ranges and the vineyard sources for The Pairing wines are the same as JONATA and The Hilt. Vineyards are located in Ballard Canyon, Sta. Rita Hills and Santa Maria Valley AVAs and all are farmed to the highest standards. Grapes used for The Pairing wines are from younger vines or those that don’t fit the vintage style of JONATA or The Hilt. So, The Pairing wines are made with the same care and attention, but they are very affordable.

2019 The Pairing Sauvignon Blanc, Californialight golden with aromas of stone fruit and oat hay. Flavors follow with yellow peach, citrus zest and oat hay supported by lively acidity. 13.5% abv. SRP $25

This Sauvignon Blanc tends more toward tropical than herbal aromas and flavors. It’s easy sipping and balanced.

2017 The Pairing Red, Californiamedium ruby with ripe plums, baking spices, ripe blackberries and hints of cedar. Flavors begin with ripe plums, cedar and baking spice. Dried herbs fill in the background and are supported by drying, smooth tannins. The body is medium and cedar notes linger on the finish. 14.1% abv. SRP $25

The Red is a blend of 50% Cabernet Sauvignon, 20% Cabernet Franc, 20% Merlot, 10% Petit Verdot.

2018 The Pairing Syrah, Santa Ynez Valley, Californiamedium ruby with violet at the rim. Aromas and flavors are generous and include smoke, plums, leafy tobacco and dried herbs with a slight bitterness on the finish. Tannins are gauzy and drying in a medium body. 14.5% abv. SRP $25

Both the Red and Syrah are easy sipping with layered flavors of ripe (but not overripe) fruit that make them a good pairing for pizza, pasta and grilling.
